Bleeding is performed when the aromas of the red fruits are adequately extracted, well integrated and in balance with the must. Spontaneous fermentation with indigenous yeasts. Vinification on fine lees in traditional barrels (5-500L). Malolactic fermentation.

The color is an intense and deep rosé, fine velvety bubbles and creamy mousse. Dried red fruits and raspberry on the nose waiting for dry flavors. Intense red fruit palate, notes of dark red rose petals, peppery spices and dried red fruits and minerals. This traditional method “de saignée” rosé sparkling wine is rich in flavor and has a vinous terroir character that makes it particularly suitable as an accompaniment to food.
Store and Serve Advices:
Serve at a temperature between 10ºC and 12ºC.
Food Pairing:
A perfect and excellent appetizer with oriental and Asian cuisine. It will pair perfectly with grilled lobster or large prawns and rare roast lamb or game such as pigeon, pheasant or wild duck.
