These grapes come from our vineyards in Sousão, located at an altitude of 480 metres, on soils that are transitional between granite and schist, giving a balanced ripeness that is reflected in this Quinta da Extrema batch. The grapes are carefully selected and hand-picked into 20kg boxes. In the winery, the grapes undergo a 48-hour cold maceration in stainless steel tanks. Fermentation begins after this period and lasts 7 to 10 days, at a controlled temperature of 23ºC. Part of the fermentation takes place in new French oak barrels. After 18 months of ageing in barrels, some new and some used, the wine is then bottled and spends a further 1 year maturing before being ready to be enjoyed.
