Product details

Winemaking:
Harvested by hand, the grapes are transported in small 12kg cold boxes to the winery. The bunches pass through the sorting table to small 300kg presses where the grapes from the top, middle and bottom of the bunch are destemmed separately by hand, each selection occupying its own press. Sangria concentrates the skins/wort ratio to 30 per cent. Alcoholic fermentation takes place over 10 days without temperature control and with indigenous yeasts. Malolactic fermentation takes place spontaneously during a cuvaison of around 2 months, after vertical pressing at high pressure, the whole wine is aged in barrels. 108 months in third-use Tronçais barrels and one new Allier barrel. 27 months in bottle.
