The bunches of whole grapes, harvested on September, initially passed for 9 days through a carbonic maceration process, in an atmosphere saturated with carbonic anhydride, at a temperature of about 38º C. After this period, where a first enzymatic fermentation inside the berry, the so-called intracellular fermentation, which gives rise to about 1% alcohol, the grapes were transferred to a pneumatic press and subjected to pressing in order to release the must. This must was subjected to alcoholic fermentation in a vat with temperature control to around 16º C, after which the malolactic fermentation was induced, by the addition of lactic bacteria.

Wine made using the carbonic maceration technique, which gives rise to wines with sui generis characteristics, with an aromatic expression focused on the fresh notes of strawberry and raspberry, very soft palate, where the tannins appear very round and velvety.
Store and Serve Advices:
Serve at a temperature of 12ºC.
Food Pairing:
This wine finely accompanies red meats, roast beef and grilled meats.
