Manual harvesting in 20kg boxes, with selection on a sorting table. Total destemming with gentle pressing where decanting takes place naturally for 48 hours. Fermentation in stainless steel at 16ºC with fine lees stirring. Ageing in stainless steel until August with bottling after fining and light filtration.
