Curtimenta improves the intensity, structure and persistence of the wine. Subsequently, the liquid is transferred to a cement vat, where it ferments at 16 ºC. When it reaches a density of 1008, the wine is transferred to used Portuguese chestnut barrels, measuring 400 and 225 L, in which the alcoholic and malolactic fermentation ends, remaining for 15 months in bâtonnage.

Tasting Notes:
Open and sparkling straw colour, it has a slightly floral aroma with notes of quince and apple, white pepper and other spices. In the mouth it has marked minerality, excellent structure, combined with moderate acidity and high aromatic richness.
Store and Serve Advices:
Serve between 10 ° and 12 ° C.
Food Pairing:
Oven dishes, pasta and intense foods, especially fish. Also good with soft and intense cheeses.
