In the family winery and in a traditional way, all the appropriate knowledge and techniques are put into practice to obtain a wine with minimal intervention. No SO2 is added at the entrance to the winery, there is a 24-hour pre-fermentation maceration, whole bunch, manual pressing, free fermentation in 400-litre new French oak barrels and ageing without SO2 correction for 2 years. Ageing on the lees with batonage to remove the lees and protect the wine. Second ageing in bottle at the producer and in ideal conditions for 12 months. Unfiltered, decanted. No added SO2.

Tasting Notes:
The aroma immediately reveals what it's going for: very centred on citrus peel, vegetal notes, with intensity and complexity. Orange zest, grapefruit, lots of vegetal bitterness, vibrant acidity, all wrapped up in a huge, creamy body. A very long, citrusy finish. It's a striking, personalised wine, full of flavour, still very young, with everything it needs to grow in the bottle.
Store and Serve Advices:
Recommended serving temperature of 10 to 12º C.
Food Pairing:
Perfect with pickled dishes, shellfish, fatty fish, white meats and pastas. Its versatility makes it an excellent choice for various gastronomic combinations.
