Product details
Manual harvesting, done earlier than usual to preserve the freshness of the grapes. The grapes are destemmed and crushed upon arrival at the winery and then pressed. The must is refrigerated to 8ºC and undergoes static decantation for 2 days. Fermentation is interrupted by very low temperatures, allowing some of the sugars to ferment, resulting in a naturally sweet wine.
