Manual harvest, light maceration followed by pneumatic pressing of the whole grapes. Cold decanting of the must for 24 hours. Fermentation in used barrels and in an oak barrel for 12 to 15 days. Aging on fine lees in French oak barrels of 500lts and in a barrel of Austrian oak of 2000lts for about 12 months, followed by 6 months in bottle.

Tasting Notes:
Yellow in colour, with a complex aroma, the citrus, floral and spice aromas from its aging in barrels stand out. With concentration and volume, its finish is long and persistent. It will evolve well over the next 20 years.
Store and Serve Advices:
It should be served at a temperature of 10ºC to 12ºC.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
