Winemaking:
Early harvest, always the first harvest of the season. The Arinto and Azal grapes are hand-picked in excellent health, in small boxes (17 kg), which are pressed directly and very gently from the entire bunch. The wine ages in small stainless steel vats for 3 months, and is then bottled without any added sulphites, which allows malolactic fermentation to begin spontaneously in the bottle. The wine is normally released after a year of aging in the bottle.

Tasting Notes:
Slightly cloudy color as it is an unfiltered wine. Very citrus aroma, hints of baking. In the mouth it is fresh, light, salty, slightly carbonated.
Store and Serve Advices:
Serve at a temperature between 8ºC and 10ºC.
Food Pairing:
It goes perfectly with naturally salty dishes, such as seafood, shellfish, cheese and tempura. A lemon/citrus dessert is also welcome.
