After the manual harvest, the grapes were transported to the winery in 18kg maximum capacity boxes, thus preserving all their integrity and quality. The different plots of the Tinta Roriz variety were harvested according to their ripeness. Afterwards, the grapes were sorted on a sorting mat, destemmed and crushed and moved by gravity to stainless steel fermentation tanks. Pre-fermentation maceration was carried out at low temperatures ranging from 24 to 48 hours, followed by alcoholic fermentation at temperatures between 25-27ºC. Once the alcoholic and malolactic fermentations were finished in stainless steel tanks, the wine was transferred to 225 litre oak barrels. Aged for 20 months in oak barrels.

Tasting Notes:
A wine with a very harmonious profile, with wild red fruit (redcurrants, red plums), black cherries, forest fruits and spices from the barrel ageing adding to the complexity of the blend. On the palate, it stands out as a wine with extreme finesse, which is unusual among its peers.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 16/18ºC.
Food Pairing:
This wine finely accompanies red meats, roast beef and grilled meats.
