Made with 86% Rabo de Ovelha from 2011, 7% Rabo de Ovelha from 2013, 4% Rabo de Ovelha from 2015, 3% Rabo de Ovelha from 2017.The bunches pass through the sorting table directly to the pneumatic press where the must is slowly extracted and goes into second-use barrels where it ferments with indigenous yeasts without temperature control for about a month. Malolactic fermentation also occurs spontaneously. The flower veil is intentionally developed. Aged for 82 months in Allier barrels on lees with weekly bâtonnage and 3 years in bottle.

Tasting Notes:
Bright golden in colour, the nose presents the exuberance of dried cashew, in the mouth, smoked grapefruit dominates the almost endless panorama of crunchy minerality and extreme gastronomic tension.
Store and Serve Advices:
Keep the bottle lying down at 12ºC. Serve at 12/14ºC.
Food Pairing:
Meat, lamb and fatty fish dishes in the oven.
