Winemaking:
Total destemming with crushing of the grapes in a pneumatic press, natural and static decanting, followed by fermentation with indigenous yeasts in barrels, at a temperature of approximately 18-22ºC. Aging on fine lees in reducing environment, without adding sulphites. Complete malolactic. Low addition of sulphites before bottling. Natural decantation, the wine has not been clarified or filtered, and may show deposits. Aged for 11 months in barrels.
