Fermentation in oak vats with controlled temperature at 12ºC. Stage in stainless steel with bâtonnage every 15 days.

Tasting Notes:
Light, open and limpid colour. Discreet on the nose with citrus notes, flint and wet stone. In the mouth the attack is also citrusy, but here the fruits of white pulp, pear and again wet stone, mineral and salty come together. Very balanced, fresh, full, long and persistent acidity.
Store and Serve Advices:
The bottle should be kept in a dry and cool place, sheltered from light. Serve between 8°C-10°C.
Food Pairing:
Ideal with light meals such as fish dishes, sea-food and salads. However, its potential is also shown when enjoyed on its own or as an aperitif.
