Manual harvest into 12kg crates in the early hours of the 2nd and 3rd of September. After a 12-hour cold pellicular maceration, fermentation lasted 20 days at a controlled temperature in new French oak barrels. After the fermentation period, the wine underwent a daily "bâtonnage" for a period of five months.

Tasting Notes:
Citrus in colour with a strong aroma of minerality and hints of flint. Full mouth, with excellent acidity providing an intense freshness: a relevant unctuousness with a long, structured ending.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
To be dished up with roasted fish in the oven, cod-fish, shellfish, sushi and also soft sheep cheese.
