Winemaking:
Soalheiro Blanc de Noirs was born from a meticulous manual harvest, dedicated exclusively to the Pinot Noir grape variety. The grapes, picked at the ideal point for sparkling wine, were pressed whole and delicately, without contact with the skins, preserving elegance and avoiding color or tannin extraction. The must fermented slowly in stainless steel at low temperature, revealing a pure and tense profile. After a brief aging on fine lees, it was prepared for the second fermentation in the bottle. The wine remained at rest in the cellars for 42 months, in contact with the lees, developing a creamy texture, integrated mousse and subtle aromas of brioche, dried fruit and light toast. It was disgorged with minimal dosage, resulting in a dry brut sparkling wine of great precision, freshness and depth, which clearly expresses the purity of Pinot Noir and the identity of the Atlantic terroir.
