Produced using the ancestral method, in which the wine is bottled before it has fully completed its first fermentation, then finalises the fermentation of the natural sugars in the bottle, creating carbon dioxide. There is no second fermentation.

Ensaios Soltos is a wine produced in small quantities that result from experiments. Combining learning, but above all in the trial-error relationship, we promote both the elasticity of the various grape varieties, the recovery of traditional vineyards, and the use of different methodologies in the cellar. If the “Rehearsals Loose” go well, they reach the market in small productions.
Store and Serve Advices:
Should be served at a temperature between 8 and 10 º C.
Food Pairing:
Ideal as an aperitif, seafood-based entrees or celebrating good times.
