Winemaking:
Gentle pressing and fermentation is allowed to occur through the action of indigenous yeasts. However, before fermentation is complete, the wine is bottled, thus completing the fermentation of the sugars in the bottle and releasing carbon dioxide, which is responsible for the presence of effervescence.
