Product details

Winemaking:
The grapes are harvested manually, hand-selected, and destemmed in granite lagares, where they are foot-trodden for up to four hours. The must is then fermented by wild yeasts at temperatures ranging from 20 to 25 °C, with brandy subsequently added at the appropriate time to stop the fermentation. At the end of maceration, the lees are drained, pressed, and transferred to old Port wine barrels to mature before final blending and bottling. As with all Port wines, blending is fundamental, and we use a variety of aged parcels with different levels of sweetness and acidity, including a small proportion of some very old barrels (at least 50 years old).
