The grapes are harvested at medium to late ripeness. Gentle whole-berry pressing using a pneumatic press to extract the best must. Must oxidation to maintain a more stable wine, requiring less sulphur dioxide over time. No sulphur dioxide is added. Cold settling and spontaneous fermentation at room temperature in a mixture of new and used French oak barrels. No added nutrients to facilitate fermentation. Malolactic fermentation. Left on the fine lees until as late as possible before bottling, with bâtonnage only at the time of topping up. Aged for 16 months in the same barrels until bottling. Light filtration at bottling.

Tasting Notes:
Golden yellow. A balance of honeyed lemon and grapefruit, enveloped by more complex notes of clove, quince, and a certain smoky, umami, and flint note. The perfectly integrated oak and the rounder mouthfeel are balanced by intense acidity.
Store and Serve Advices:
Serve at 10-12ºC.
