The grapes are harvested manually, cooled in a cold room to 10ºC, sent to the destemmer and subjected to gentle pressing at low temperatures, followed by cold decanting for three to five days, with the lees being removed in the first twenty-four hours. Alcoholic fermentation gives way to a two-stage ageing process: first, each grape variety rests individually for eight months in 500L barrels and 1200L casks made from first and second use French oak; then, once the final blend has been defined, the wine returns to the casks, where it remains for another eight months. The ageing process continues in the bottle for 14 months.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
