Winemaking:
Manual selection followed by destemming and skin maceration. Pneumatic soft pressing. The must fermented in stainless steel tanks at low temperature. Stabilization and light filtration. No animal derived form was used in the winemaking process making this wine suitable for vegan consumers. Special care was taken in winemaking, minimizing any intervention, with the purpose of producing a natural wine, which expresses the particularities of vineyards, grape varieties and climate.

The 2019 Avesso P67 "Monólogo" is unoaked and comes in with 2.6 grams of residual sugar, 6.6 of total acidity and 13% alcohol. For precision and focus, perhaps overall structure, this might be the best of the three Monólogos. It has an airy feel, despite reasonable concentration. It perhaps does not yet, in its youth, express the grape as well as the Arinto or the Malvasia.
