The selected grapes are harvested by hand and transported in the same instant, in 20 kg boxes, for processing. In family winery and traditional methods, it is put into practice all the knowledge and traditional techniques transmitted by our ancestors, to producing a high quality wine with respect to their origin and typicality. A patient and wise way Grandma taught us, this wine go through maceration with fermentation starter in contact with the skins before pressing. The continuous fermentation in stainless steel and one part of wood. It follows an aging process “sur lies” with stages of homogenization (bâtonnage) until the time comes to make the bottling (8 months after harvest).

Tasting Notes:
Citric colour. Strong complexity with notes of flowers and fruits (lychee, jasmine) involved in soft wood (toasted and cinnamon). Very balanced and fresh given to mineral structure and full-bodied he have. Persistence with emphasis of fruits, flowers and spices that feel the aroma.
Store and Serve Advices:
Recommended serving temperature of 10 to 12º C.
Food Pairing:
Excellent with shellfish and fish in general.
