Winemaking:
Manual harvest taking advantage of the coldest hours. Pellicular maceration of a percentage of grapes. Must exclusively from tear, with no pressure during pneumatic pressing at low temperatures to conserve the aromatic potential. Cold decantation for 48 hours. Fermentation with selected yeasts at 14/16ºC for 6 weeks in small tanks from 1500 to 3000L. Aging for 24 months in contact with fine lees with periodic bâtonnage. Bottle aging before being released on the market.

Tasting Notes:
Straw colour with golden hints. Delicate aroma with the genuine expression of the variety. Lychee and truffle notes at the end. Alive, rich, elegant and of great persistence.
Store and Serve Advices:
Perfect serve between 12 and 14ºC.

Very good with fish or white meat in the oven, Asian food and soft cheeses.
