Product details
The grapes were harvested manually, with selection, into small 20 kg boxes. At the winery, the grapes were again handpicked and then de-stemmed. The crushing - passive - was the result of transport to the press, where they underwent short maceration and gentle pressing. Fermentation took place at room temperature. The wine aged for 5 months in used 225 L French oak casks from the Allier forest, with various low-intensity toasting regimes and periodic battonages were carried out. It then aged for another 4 months in stainless steel, until the day of bottling.
