Hand-picked grapes were harvested in the morning only. At the winery entrance, only the best bunches were selected by hand selection on the sorting table. The whole bunch was then pressed in an open spout. The must was clarified by cold decantation for 48 hours. Fermentation at a controlled temperature between 18-20ºC with indigenous yeasts, in new 225L French oak barrels. Aged on fine lees for 8 months, with progressive battonages.

Tasting Notes:
Bright lemon yellow colour. Rich and complex, with citrus notes, stone fruit and light tropical notes, in perfect harmony with aromas of barrel toast, brioche and beeswax, provided by the ageing in barrels and progressive battonages. A very rich and structured wine, with its subtle acidity balancing out the creaminess and volume, very unusual in a white wine. It has a round, long and persistent finish.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 10-12°C.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an appetizer.
