Product details

Winemaking:
Vineyards planted on the hard soil of Colares. Deliberately late hand-picked to allow the full aromatic component of Malvasia to develop. Skin maceration on 100% of the grapes for 6-8 hours. Light crushing of the berries followed by gentle cold pressing. Fermentation of 70% of the production in stainless steel vats, followed by ageing on fine lees and bâtonnage until April. The remaining 30% ferments in used French oak barrels, followed by ageing on fine lees and bâtonnage also until April.

Store and Serve Advices:
It should be drunk at around 8-10ºC and can benefit from aging in the bottle for 8 years.

Food Pairing:
Ideal with seafood, grilled fresh fish, white meats and as an aperitif.
