Winemaking:
The grapes are harvested by hand and transported to the winery in 20kg boxes. After going through a manual selection process, the bunches are destemmed and the grapes are pressed in a pneumatic press. After 24 hours of decantation, the must undergoes alcoholic fermentation in stainless steel tanks at 14-16ºC. 80% of Gouveio aged in barrels (20% new wood) and in a cask, both made of French oak, for a period of 8 months in contact with fine lees using the batonage method, while 20% aged in stainless steel until the batch was made and bottled.

Tasting Notes:
A Gouveio with an attractive citrine color, revealing shine and youthfulness. On the nose, delicate notes of white plum, pear and dried flowers emerge, in a very fine and complex profile. When tasting, it shows its fresher aromatic side with an excellent texture complemented by its mineral character, ending tense and full of flavors.
Store and Serve Advices:
It is recommended to serve the wine chilled, around 10-12ºC.
Food Pairing:
Pairs well with grilled sea fish, a variety of seafood or cured cheeses. As a vegetarian suggestion, a vegetable quiche or summer quinoa.
