The four grape varieties fermented separately in stainless steel truncated vats, with the exception of Alicante Bouschet, which fermented in a wine press. The wine is aged for 24 months in new French oak barrels.

Tasting Notes:
It's a wine designed to age in the bottle for more than 20 years. It has identifying notes of the terroir, such as cedar, spice, fresh fruit and toasted cereal. On the palate it is elegant and polished, but at the same time it has extraordinary breadth and depth, showing several layers of complexity and flavours.
Store and Serve Advices:
Bottles lying horizontally in an airy and dark place, between 12 and 13ºC. Should be served at a temperature of 16 to 17ºC.
Food Pairing:
It pairs well with matured red meats (roast lamb with herbs, grilled or barbecued beef with a spice crust), game dishes or exotic meats, risottos and refined pastas, aged cheeses (hard cheeses such as Parmesan, Grana Padano or aged Manchego) and desserts such as a dried fruit and spice tart and bitter chocolate with low sweetness.
