Destemming of the berries, followed by pressing in a 19th century rod press. Static decantation. Fermentation with only indigenous yeasts, in French oak barrels, without temperature control. After fermentation, the wine was aged on fine lees in the same barrels for approximately 18 months, with batonnage. Gentle filtration and bottling on July 15, 2020, taking into account the biodynamic calendar.

Tasting Notes:
Bright, straw-colored color with good intensity and citrus reflections. Clean aroma, with complexity and depth. Floral aromas (yellow flowers), ripe citrus fruits (lemon, grapefruit) and aromatic herbs (lemon thyme) stand out, supported by notes of spices (vanilla). Dry, unctuous palate with enveloping acidity. Fermentation and barrel aging gave it an excellent structure and a long finish, suggesting a great aptitude for aging. Harmonious wine. Gastronomic profile.
Store and Serve Advices:
It should be enjoyed between 12 and 14°C, preferably in a Chardonnay-type glass, after decanting.
Food Pairing:
Ideal with seafood, grilled fresh fish, white meats and as an aperitif.
