Wine with minimal intervention, limited and highly controlled use of all non-natural agents. Fermented in stainless steel wine presses and ancient clay amphorae (amphoras) inspired by Roman times. No mechanical pumps were used in the fermentation in the amphorae; all the filling of the clay amphorae was done manually. Partial use of the Alicante Bouschet and Aragonez grape stems. Spontaneous fermentation of both batches, carried out using indigenous yeasts. Post-fermentation maceration of 15 days. The portion fermented in stainless steel was aged for 6 months in used French oak barrels.

Tasting Notes:
Intense ruby colour. Aroma of red fruits and very expressive forest fruits. The exuberant fruit, strength and youth revealed on the nose, are reminiscent of artisanal Alentejo wines from clay amphorae. Some notes of black fruit and spices. Jams and caramelised fruits. The palate is rich, enveloping and has “mineral” notes left by the clay of its origin. Challenging tannin that helps to combine with food. Pleasant and balanced combination.
Store and Serve Advices:
Serve at a temperature between 14ºC and 16ºC.
Food Pairing:
Oven-baked or grilled meats. Oily fish from the oven. Sausages, smoked meats, hard or medium-aged cheeses.
