After crushing the grapes with de-stemming and disinfection with a minimum dose of sulfur dioxide, selected yeasts were inoculated. Fermentation took place in a small stainless steel tank at a temperature between 28 and 30º C, with pumping over regularly with aeration. After malolactic fermentation, the wine aged entirely in wooden barrels (French oak) for one year. Bottling was done about a year and a half after harvest and the stabilization of the wine was limited to light fining followed by filtration. It is not stabilized by the cold and can therefore form a slight precipitate over time, which in no way affects the quality of the wine.

Tasting Notes:
At first the aroma is dominated by fruit, then vegetal notes begin to appear with wood very well involved, in a combination of great elegance. In the mouth you can see why it is a wine with a gastronomic profile, with persistence, acidity and very powerful, but civilized, tannins.
Store and Serve Advices:
Serve at 16 º C, when young, and around 18 º C, with more than five years old. In this case, a slight sediment may form, which justifies its decanting before serving.
Food Pairing:
While young, it is especially suitable for strong dishes and intense flavours, including octopus, cod with bread or hare with white beans. Over time the bottle is becoming more complex and round up the tannins, becoming perfect for the leg of lamb in the oven or partridges.
