Destemming and pressing of whole berries; 12 hours of pre-fermentation maceration, static cold clarification for 48 hours, fermentation with indigenous yeasts. Fermentation between 16-18ºC. The final third of fermentation has already taken place in 300 liter French oak barrels from the 4th and 5th year. Aged for 9 months with Battonage on fine lees.

Tasting Notes:
Straw yellow color with medium and clear brightness. At first analysis, the notes of white pepper, vanilla, Rocha pear, firewood, pine bark, white flowers, and tangerine peel stand out, ending with pure minerality and white chocolate. Wine of full balance, with breed but with a silky and dense texture that elevates it. The ending is of genuine complexity and length that leaves us salivating.
Store and Serve Advices:
Service temperature between 8 and 12⁰C. Store in a dry, cool place away from light.
Food Pairing:
Pairs well with oven-baked cod with olive oil, cod fish rice, oven-baked pork bisaro, grilled brill.
