Product details
Winemaking:
Grapes selected from vineyards certified for the production of DOC Alentejo wine in the Borba sub-region were harvested manually in the morning, allowing the fruit to reach a good temperature on arrival at the winery. The grapes were destemmed with light crushing, followed by a 12-hour skin maceration in stainless steel vats at 10ºC. After bleeding and gentle pressing, the tear must fermented separately, 60 per cent in Portuguese, American and French oak barrels, 40 per cent in temperature-controlled stainless steel vats at 15ºC. After fermentation, the wine in the barrels continued to age for 6 months in the same barrels, after which the final blend was made with the rest of the wine. Bottling followed filtration.
