Harvest in the 2nd week of September. Grapes crushed, destemmed and pressed. Decanted for 48 hours. Fermented with natural, temperature-controlled yeasts in stainless steel vats for a week, then transferred to used French oak barrels where it fermented for a further 3 weeks. It remained on its lees. No malolactic fermentation. Aged 100 per cent in used barrels for 47 months. The first 24 months were on the fine lees and the lees were lifted (Bâtonnage) monthly.

Tasting Notes:
Mineral aroma, citrus and tropical fruit, fresh and full-bodied on the palate, buttery texture and complexity provided by fermentation and ageing in barrels.
Store and Serve Advices:
Serve at around 13 to 14ºC.
Food Pairing:
Serve with roast fish, seafood rice, white meats, mushroom rice dishes, pasta with cheeses.
