Product details
Favaios 1980 is the kind of wine that is only vinified in years when the grapes have proved to be of exceptional quality. After careful selection of the best grapes from Favaios, they were macerated and fermented as they were traditionally in the region. Alcoholic fermentation is very short, with most of the must being bled off and brandy being added as soon as the skins come up. A small part of the must continues to ferment and macerate with the skins for a few more days and only later is this very aromatically rich must fortified. The first and second musts are then mixed and stored in very old wooden vats and then aged slowly, refining their bouquet over decades.
