Product details
In 2007, the climate had a significant impact on the grapes of the Favaios plateau. That was a balanced winemaking year, with mild temperatures, moderate rainfall, and a summer without extreme heat waves, allowing for the creation of high-quality grapes with great concentration, aromatic intensity, and aging potential. After careful selection of the best Favaios grapes, maceration and fermentation were carried out using the region's traditional method. Alcoholic fermentation is very short. Soon after the cap rises, most of the must is drained and brandy is added. A small portion of the must continues to ferment and macerate with the skins for a few more days, and only later is this aromatically rich must fortified. The first and second fortified musts are then blended and stored in old wooden vats, where the wine ages slowly, refining its bouquet over the years.
