Slight cold pre fermentative maceration. Smooth pressing in the “Coquard” press. Plot fermentation, in stainless steel with temperature control, then passing to 300 liter barrels of French oak (5-15% new) where fermentation ends and initiates the internship. Bâtonnage only in the first few months (4 to 6 months). Malolatics can occur in some barrels. The barrel internship lasts between 6 to 9 months, then passing to large shades of 2000 liters of used wood (French oak) where it remains about 3 months until the bottling. It is launched in the market with up to 2 months of bottle.

Tasting Notes:
Lime yellow with slight greenish shade. Captivating scent of burned phosphorus combined with tropical and wet stone scents. Middle body, vibrant acidity, and linear minerality that dances in the palate, giving a “mine water” feeling that remains until the end.
Store and Serve Advices:
Serve it between 10 to 11°C.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
