The vinification methods used are paradoxical, show that high quality grapes do not need great technology, vertical press and settling in "lagareta" open cement give oxidation resistance but also for years to come, a wine which usually has acidity well marked. The fermentation is done in old wooden barrels where it remains about a year until bottling.

Tasting Notes:
Alive and fresh. Full of character and personality wine which always dominated by mineral notes typical of calcareous soils, together with aromas of pine needles and pine resin, dried fruit and some straw. The palate is always vibrant, nervous and with great structure and length.
Store and Serve Advices:
Recommended drinking temperature 12º-14ºc. Store in a dry and cool place at a constant temperature. The bottle shall be stored in horizontal position.
Food Pairing:
Ideal accompanying all fish dishes, seafood and some lighter meat dishes.
