Hand-picked at their optimum point, the grapes are destemmed, crushed and vinified using a process based on careful maceration to extract colour, tannins and aromas from the skins, complemented by constant pumping over during fermentation. Fermentation takes place in wine presses at a controlled temperature of between 28-30ºC until the desired Baumé level is reached. At this stage, grape brandy (benefit) is added, resulting in a fortified wine. A high-quality wine from a single harvest. It ages in wood for varying periods of time, never less than 7 years, and is then bottled according to market demand.

Tasting Notes:
Reddish with brown tones. On the nose it presents smoky notes wrapped in aromas of spices and dried fruits. On the palate it is fresh and intense, where flavours of sweeter fruits such as ripe cherry stand out, combined with a fresh acidity that gives it a huge and intense finish.
Store and Serve Advices:
Serve at a temperature between 14 and 16ºC.
Food Pairing:
Slightly chilled, it expresses all its sophistication when combined with desserts made with caramel, dried fruits and spices, such as caramel fondant with apple and ginger jelly, tarte tatin, creme brûlée and medium-intensity cheeses.
