The bunches pass through the sorting table directly to the pneumatic press where the must is slowly extracted and goes into used barrels where it ferments with indigenous yeasts without temperature control for about a month. Malolactic fermentation also occurs spontaneously. The development of a flower veil was provided in all barrels. Aged for 51 months in second-use Allier barrels on lees with monthly bâtonnage. It was bottled in Rama, without filtration or stabilization and aged for 1 year in the bottle.

Tasting Notes:
Cloudy straw colour of medium intensity, very Jerezian aroma based on toasted almonds and saline notes, in the mouth it is sharp in attack and broad in persistence, a white of great art.
Store and Serve Advices:
Keep the bottle lying down at 12ºC. Serve at 12/14ºC.
Food Pairing:
Meat, lamb and fatty fish dishes in the oven.
