Manual harvest for small boxes, in the last days of October. After harvesting, the grapes are stored in the cold room, starting to cool down until they reach negative temperatures, so that they can freeze practically. Afterwards, they are destemmed and pressed, giving rise to a must with an enormous wealth of sugars. Fermentation takes place in stainless steel vats at a controlled temperature, when the desired point is reached between alcohol and residual sugar, the fermentation is stopped using cold. Aging for 24 months in 300 liter French and Hungarian oak barrels.
