After hand harvest, the grapes were left to dehydrate/pasture in the middle of the vineyard, on top of mulching in order to promote a concentration of sugars. After 15 days, the grapes were collected in the field and selected and pressed very gently. The must fermented with wild yeasts in a old Sauternes and Scotch barrel. Ageing for 10 months in the same barrel on fine lees.

Tasting Notes:
Terracotta color, translucent and bright. Aroma of pomegranate, currants and sour cherry. In the mouth, it presents a good balance between sweetness and acidity, with a fruity and fresh finish.
Store and Serve Advices:
Better serve at a temperature of 8ºC.
Food Pairing:
Accompanying entrees such as foie gras, cream cheese or even nuts. It can also be served with almond desserts or even lemon tart.
