The grapes were co-fermented in lagares where fermentation with indigenous yeasts takes place. Temperature control allowed regulating the fermentative kinetics in order to make it possible to carry out a more intense and prolonged extraction. Once the desirable baumé was reached, it was fortified with the addition of wine brandy. After 48 hours, the liquid was separated from the masses, where a “repise” was subsequently carried out.

Tasting Notes:
Opaque ruby colour with violet hints. On the nose, it is very intense, with notes of black fruit, blackberries, black currant jam, ripe wild red fruit and a slight balsamic that conveys freshness. In the mouth, the aromatic sensations are repeated, with Flavors of dried figs, ripe red fruits and a slight blueberry flavour. The tannins are powerful and very polished, but thanks to its acidity, it is fresh and very persistent. A wine that, due to its structure, complexity and acidity, will evolve over the next 50 years.
Store and Serve Advices:
Should be opened two hours before serving and decanted. Serve between 15º and 17º C. Store the bottle in a horizontal position, in a cool, dry and dark place.
Food Pairing:
Drink with cheese like Stilton or Gorgonzola or with deserts based on red fruits or dark chocolate.
