The grapes, from old vineyards, were transported in food-grade plastic boxes and subjected to rigorous sorting upon entering the winery. After gentle crushing, without destemming, they were sent to a traditional wine press where they were trodden at regular intervals. The alcoholic fermentation was then interrupted by the addition of grape brandy. The wine was aged in 9,000-litre oak barrels, where it remained for approximately 2 years. It was bottled without any fining or filtration, and is subject to the formation of a slight deposit during its ageing.

Tasting Notes:
Dark violet in colour, almost opaque, it presents fresh notes of rockrose, wild blackberries and soft hints of cocoa on the nose. In the mouth it starts off powerfully and evolves into a compact wine with solid but elegant tannins that give it a very firm structure. A complex and persistent wine that has a high potential for ageing in the bottle.
Store and Serve Advices:
Serve at 14º/16ºC.
Food Pairing:
Drink with cheeses such as Stilton or Gorgonzola. But you can also incorporate them into a meal, for example with Steak au Poivre in the case of a young Vintage.
