Winemaking:
This Vintage Port from Quinta das Carvalhas is produced from a selection of plots of Old Vineyards where a truly surgical harvest is carried out to hand-pick only the grapes that are at the desired levels of ripeness. Through on-site tasting, only perfectly ripe grapes are harvested, repeating the operation throughout the harvest period. Once harvested, they are transported to the winery in small boxes, beginning the ancestral process of foot treading in traditional granite presses, which, due to their shape, allow perfect contact between the must and the skins, allowing greater extraction. Fermentation is interrupted by adding wine brandy, followed by aging in oak vats for a period of 2 years.

Store and Serve Advices:
Store in a cool, dark place (12-14ºC), in a horizontal position, with minimal vibration. Serve at a temperature of 16ºC. It is advisable to consume on the same day or within 3 weeks. There may be deposits in the bottle.

Food Pairing:
Vintage Ports are drinks after meals. Take them with cheese like Stilton or Gorgonzola. But you can also incorporate them into a meal, combining for example a Steak au Poivre with a young Vintage.
