In our Port winemaking center, in Vale de Mendiz, Bioma grapes are trodden by foot in granite presses, with 100% stems. After fortification with wine brandy, Porto stabilizes during the winter. In spring, the wine is transferred to our cellar at Quinta de Nápoles and placed in barrels (traditional 550l barrels). In the case of Niepoort's classic Vintage, and most other Vintage Ports, the wines are transferred to Vila Nova de Gaia, where they are aged in large barrels and vats. The use of barrels instead of large barrels and rafts was inspired by the “old days”, when wine was sent in barrels to England. Additionally, we bottle Bioma in the third year after harvest, rather than until the end of the second year. This means that we offer Bioma a year after the classic Vintage Port.

Tasting Notes:
Heavy red color, with red/purple border. Aroma with notes of dark chocolate, along with young black fruits and a wonderfully fresh wineiness; on the palate, it reveals a magnificent rustic character and very well integrated black fruits. A fantastic combination of elegance and strength.
Store and Serve Advices:
Ports are wines that develop very well in the bottle and should therefore be stored in a dry and cool place where the bottles should be kept laid down and away from light. Serve at a temperature of 17 to 18ºC.
Food Pairing:
Perfect with Queijo da Serra, Stilton or other “blue” cheeses. Desserts with egg sweets, especially sponge cake.

There is a touch of bitter cherry, as well as a firm, dense core that shows a fine balance of acidity. This is powerful, full-bodied and packed with dark fruit—for long-term aging.
