Product details

Winemaking:
In our Port winemaking center, in Vale de Mendiz, Bioma grapes are trodden by foot in granite presses, with 100% stems. After fortification with wine brandy, Porto stabilizes during the winter. In spring, the wine is transferred to our cellar at Quinta de Nápoles and placed in barrels (traditional 550l barrels). In the case of Niepoort's classic Vintage, and most other Vintage Ports, the wines are transferred to Vila Nova de Gaia, where they are aged in large barrels and vats. The use of barrels instead of large barrels and rafts was inspired by the “old days”, when wine was sent in barrels to England. In addition, we bottle Bioma in the third year after harvest, instead of until the end of the second year. This means that we offer Bioma a year after the classic Vintage Port. All of these factors allow for a greater presence of oxygen in the new wine, which - we believe - will contribute to the stabilization of color and tannins in the long term, giving rise to a wine with all its components more integrated.

Store and Serve Advices:
Ports are wines that develop very well in the bottle and should therefore be stored in a dry and cool place where the bottles should be kept laid down and away from light. Serve at a temperature of 17 to 18ºC.

Food Pairing:
Perfect with Queijo da Serra, Stilton or other “blue” cheeses. Desserts with egg sweets, especially sponge cake.

A very dry Port, the tannins concentrating the fruit into a tight, mineral ball. Even if the fruit is suppressed at this stage, it will show through in years to come, leaving a structured but rich wine.

This has medium grip, with effusive dark berry and red fruit flavors backed up by plenty of fresh acidity. The sinewy finish is bright and juicy, as plenty of chocolate-covered cherry and spice notes chime in. Best from 2018 through 2035. 400 cases made.
