Hand Harvested. Fermented in Amphora with indigenous yeasts. Long contact with skins (around 60 days). Malolactic fermentation under skins. Ageing for 3 months in small clay Amphora sur lies.

Tasting Notes:
Loaded with colour. Resinous, austere, vegetable, and with a serious aroma. In the mouth it shows good freshness, adjusted degree and a different profile, always on a rustic side, without evident fruit but with a lot of personality.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
