Product details
Hand-harvested at their peak, the grapes are destemmed, crushed, and vinified through careful maceration to extract colour, tannins, and aromas from the skins, complemented by continuous pump-overs during fermentation. This process takes place in vats at a controlled temperature between 28-30ºC until the desired Baumé is reached. At this stage, grape brandy is added (fortification), resulting in a generous wine. A wine of exceptional quality, from a single harvest. It matures in wood for varying periods, never less than 7 years, and is subsequently bottled upon market demand.
